Mac ‘n cheese with bacon

Homemade macaroni and cheese is an easy, delicious dish. I made a great combination last night and thought I would share the recipe I created.

Ingredients needed for four servings:
Pasta (half box)
2 T. unsalted butter
2 T. all-purpose flour
1 C. milk
10-12 ounces shredded cheddar cheese
Parmesan cheese
Bread crumbs
Freshly ground black pepper

I like to microwave my bacon to get it the way I like it – crispy. Place 5 strips of bacon on a microwave bacon tray and cooked it for four minutes on high with a paper towel over the bacon to soak up the grease. Check the bacon for desired doneness and microwave for one minute intervals until the bacon is done. Leave the bacon in the microwave.

Wash and chop your chives. Set aside.

If you bought a brick of cheese, shred the cheese and set aside.

Start boiling some salted water for the pasta. You’ll want to cook the pasta slightly al dente.

Pre-heat oven to 350 degrees.

White sauce:
2 T. unsalted butter
2 T. all-purpose flour
1 C. milk (I used 3/4 C. of 1% and 1/4 C. half-and-half)

Place the butter in a saucepan on medium-high heat and melt the butter. Be sure to watch the butter carefully so you don’t burn it. I recommend using a whisk to keep the sauce moving in the pan. Once the butter is melted, add the flour to the pan and whisk together. This is called a roux. Once the butter and flour is combined, whisk in the milk. Bring the mixture to a rolling boil while constantly stirring. Once a rolling boil is reached, turn the heat down to low. Stir in the chives and whisk in the cheese. Turn the burner off.

Drain your pasta and add the sauce to the pasta, mix thoroughly.  Add pasta and sauce to an oven-ready baking dish. Top mixture with bread crumbs, parmesan cheese and freshly ground pepper. Crumble the bacon over the top, cover and place dish into the oven for 15 minutes. Take the lid off the dish and bake for another 10-15 minutes, until mixture is bubbly.
