Chocolate Stout Cupcakes with Cream Cheese Frosting

This weekend was rare at HouseOFoodies as we didn’t have anything we needed to do or anywhere we needed to go. We took the opportunity to go through some cookbooks and recipes online and created an extensive grocery list. Not only does this mean we have a few new recipes to share, it means we’ve been able to take some time and actually bake.

I’ve been having a craving for cupcakes for about a week and, as ashamed as I am to admit this here, I’ve never made cupcakes from scratch. Yes, I’ve been a box cupcake gal all this time. However, I think I’ll make my cupcakes from scratch from now on. I found a recipe for Chocolate Stout Cupcakes on the Food Network’s Web site and thought I should give it a try. Afterall, it combines chocolate, sour cream and Guinness, so I couldn’t pass it up.  The recipe can be found here.

The finished product is a moist, sweet cupcake. I couldn’t taste any of the stout, but Bryan thinks there is “rich, deep flavor” at the end of the bite.

The cream cheese frosting is incredible. When you combine cream cheese, whipping cream and sugar, how can it be bad? The recipe can be found at the end of the cupcake recipe. I varied slightly from the recipe and didn’t add the whole box of confectioner’s sugar. I didn’t want the final cupcake to be overly sweet and am quite happy I didn’t add the last 1/4 of the box.

I topped the cupcakes with a few different toppings, including red sprinkles and bittersweet cocoa. Luckily, I’m married to not only an amazing chef, but a talented photographer, so please enjoy the images of our cupcakes.
